  • Step 1 Boil the milk

    Add milk to a pan along with sugar and mix well. Bring to a boil and keep on medium flame. Let the milk cook for 6-8 minutes or until it thickens a bit.

How to make Goan Patolya

  • Step 1

    In a large mixing bowl, take rice flour, pinch of salt and add lukewarm water slowly. Using a large spoon, mix the flour with water till the dough is formed. Keep it covered.

  • Step 2

    Put a small pan on low flame and add coconut and Jaggery with a pinch of salt in it. Once the jaggery starts melting, add sesame seeds init along with puffed or popped rice, and cardamom powder. Mix everything well and turn off the gas.

  • Step 3

    Once the mixture is cooled, make 5 portions of the coconut mixture.

  • Step 4

    Take one washed turmeric leaf and spread it on a flat surface. Place some rice flour dough on it. Spread evenly on the whole leaf with a wet hand. Using wet hand helps rice dough not to stick on palms and ease the spreading of it. Make a thin layer of dough as much possible.

  • Step 5

    Now, place one portion of the coconut mixture on the leaf and spread evenly leaving out the border of the leaf. Once the mixture is spread fold the leaf one end to another to make a pocket. The border should be tightly packed as while steaming it may get open. Prepare remaining leaves using the same method.

  • Step 6

    If Idli cooker is available, just boil water in the same or can use normal any big vessel. Once the water is hot, take a colander and apply oil in it. In a cooker or vessel, put the stand and keep the colander on it. Place all stuffed leaves on the colander. Now put the lid on the vessel. For cooker, use the lid without the whistle.

  • Step 7

    Let the leaves steam for 20 minutes. Check the Leaves if the dough is cooked properly. If the dough layer is very thick, it may require more time.

  • Step 8

    Once the dough is cooked, let the leaves get cooled down. Then, open one side of the leaf slowly leaving the cooked patolya as pocket intact. You can put a spoon of ghee on the same while serving.

  • Step 1 Soak rice for 30 minutes and then boil them with saffron

    To prepare this amazing sweet rice recipe, wash and soak rice in a large bowl in water for half an hour. Then, in a deep-bottomed pan, add the soaked rice, saffron and water. Bring it to a boil and cook till the rice is almost done.

  • Step 1 Blend the dates

    Add dates to a bowl. Add 1 cup warm milk and let them soak for 15 minutes. Add dates along with milk to a blender. Blend to form a thick paste.

  • Step 1 Beat the whipping cream

    Take whipping cream in a mixing bowl and beat it on medium speed with an electric mixer.

  • Step 1 Boil milk with sugar

    Boil half a litre of milk and add 250 gms sugar in it. Allow it to boil continuously till the colour changes and the quantity reduces.

  • Step 2 Make hung curd

    Now, remove this from the flame and allow it to cool. Add one teaspoon of thick curd, mix well and keep aside. When it becomes curd, hang in muslin cloth and let all the water drain out. You can use this hung curd.

  • Step 1 Boil milk and soak rice

    To make this classic Gurer Payesh, take a vessel and add milk. Once the milk comes to a boil add the rice which has been thoroughly washed and soaked for an hour. This helps in cooking rice quickly. Keep the flame low after the rice has been added and keep stirring it every 6-7 minutes.

  • Step 2 Add Gur

You have to ensure that milk is not on high flame as the gur might curdle the milk. In a pan add 1 tsp ghee and roast the almonds on low flame. You can add other nuts of your choice.

How to make Churma Barfi

  • Step 1 Mix flour, ghee and milk

    In a mixing bowl, add 2.5 cups of flour and 1/4 cup of ghee. Mix to form a crumbly mixture. Now add milk in batches and mix with your hands to make a dough-like mixture. The mixture will feel a bit dry but don’t worry about it.

  • Step 2 Make muthiyas

    Take a portion of the mixture and press between your hand to make a muthiya. Make more such muthiyas with the mixture. The pieces can be irregular, don’t worry about the shape as we have to ultimately crush them after frying.

  • Step 3 Fry the muthiyas

    Heat oil in a kadhai. Deep-fry the muthiyas until golden in colour.

  • Step 4 Grind to make a powder

    Now grind all the fried muthiyas to make a powder. Pass the mixture through a sieve to attain a fine powder.

  • Step 5 Make jaggery syrup

    Add jaggery to a pan and keep on medium flame. Let it melt completely. Mix in 1/2 cup of ghee. Now add khoya and mix until all the ingredients combine together to form a thick mixture.

  • Step 6 Make barfi mixture

    Mix jaggery mixture with powdered muthiyas. Mix to form a gooey mixture.

  • Step 7 Pour into mould and set

    Add the mixture to a tin or mould and spread with 1-2 inch thickness. Garnish with chopped pistachios and let it set for 2-3 hours.

  • Step 8 Cut into barfis and serve

    Once the barfis hold shape, cut into pieces and serve.

How to make Mango Barfi

  • Step 1 Make mango paste

    Add 1 cup chopped mangoes along with 1/2 cup milk to a blender. Blend to form a smooth paste.

  • Step 2 Cooking process

    Take out the mango paste in a pan and keep it on medium heat. Add sugar and mix till it dissolves completely.

  • Step 3 Add coconut powder

    Now add coconut powder and mix well. Cook for about 20 minutes and stir after every one minute to prevent it from sticking at the bottom. You need to cook the mixture till it holds shape and leaves all the sides of the pan.

How to make Orange Carrot Kheer

  • Step 1 Roast the oats

    Add oats to a pan and dry roast them for a few minutes while stirring continuously. Once done, take them out on a plate.

  • Step 2 Boil the milk

    Add skimmed milk to a pot and keep it on medium flame. Let it come to a boil.

  • Step 3 Add carrots

    Add grated carrots to the boiling milk and lower the flame. Let it cook for 10 minutes.

How to make Eggless Red Velvet Heart Cake

  • Step 1 Preheat the oven and prepare the mold

    Preheat the oven to 350ºF (180ºC). Line two 8’’ heart-shaped cake molds with butter and flour-dust them.

  • Step 2 Mix the dry ingredients

    Sieve flour, baking powder, baking soda, cocoa powder and salt together into a large bowl. Give a mix.

  • Step 3 Prepare the batter

    Beat unsalted butter and icing sugar till creamy and smooth with a handheld whisker on medium-high speed. It will take about 4 minutes. Once it is smooth, add sour cream, vanilla essence and vinegar. Mix till it forms a batter.

  • Step 4 Add food colour

    Keep the electric whisk on and add flour to the batter. Now add buttermilk and mix well, Beat the mixture and add red food colour to it.

  • Step 5 Time to bake the cake

    Pour the batter into the prepared cake molds and bake them for about 25 –30 minutes. Once baked, let the cake rest in the mold for some time and then take it out on a cooling rack and allow it to cool.

  • Step 6 Prepare the frosting

    Take icing sugar and butter in a bowl and beat it until creamy and smooth texture. Then add vanilla and a pinch of salt and beat until smooth. Add the rest of the sugar and beat until well incorporated. Add food colour and beat in the slightly cold cream cheese.Beat for 2 minutes, or until well incorporated, fluffy, and spreadable.

  • Step 7 Assemble the cake

    Slice the sponge cake into three layers. Place the 1st cake layer flat side down on a cake stand. Spread evenly about 1 cup of prepared frosting on it with a flat spatula. Place the second cake layer on top of the first layer. Use the remaining frosting on the cake.

  • Step 8 Ready to be served
