  • Step 1 Transfer the pasta to a bowl

How to make Masala Rice

  • Step 1 Chop the veggies

    Firstly chop all the veggies like onion, tomato, capsicum, carrot and green beans. Set them aside.

  • Step 2 Prepare the masala

    Now heat oil in a pan. Add asafoetida, cumin seeds, mustard seeds and let them splutter for a minute. Now add onion, ginger-garlic paste and mix them. Let them saute for another one minute. Now add chopped tomato along with salt. Give them a mix and cook for a few minutes, until they turn mushy.

  • Step 3 Add veggies and spice

    Add all the veggies like carrot, capsicum, peas and green beans. Add turmeric, red chilli powder and coriander powder. Give a nice mix and cover the pan with a lid. Let the veggies cook for five minutes.

  • Step 4 Add rice

    Lastly, add cooked rice to the pan and gently mix them with the masala. Add garam masala and give a final mix. Make sure you don’t break the rice in the process. Cover the pan with a lid and cook for two more minutes.

  • Step 5 Ready to be served

  • Step 2 Cook shallot and plums in chicken stock

    In the frying shallot, add the halved plums, chicken stock, and sugar. Stir to mix well all the ingredients and cook for a few minutes until the sugar has dissolved.

  • Step 3 Finish the Plum sauce with red wine

    When the mixture thickens, add the red wine to the pan. Stir to mix well and simmer the mixture for about 15 minutes, stirring occasionally until softened and slightly thickened. The Plum sauce is ready now, turn off the flame and let it cool at room temperature.

  • Step 4 For the Duck breast

    Take two duck breasts and score their skin with a sharp knife and season well with salt and pepper to taste.

  • Step 5 Fry the duck breasts in butter

    Put a non-stick frying pan over medium flame and add butter in it. Let it melt and then add thyme and star anise to it. Now, place the duck breasts in the pan with the skin-side down. Fry the duck breasts for 6-7 minutes, then flip and fry for another 2-3 minutes. Baste the duck breasts with the juices and turn off the flame.

  • Step 6 Roast the duck breasts at 180 degrees C for 10-12 minutes

    Heat an oven at 180 degrees C, place the duck breasts into a small roasting tin and roast them in the oven for 10-12 minutes until done. Once done, baste the duck breasts again with the juices, then set them aside to rest for 5 minutes.

  • Step 7 Serve hot with plum sauce

    To serve, thinly slice each duck breast on a chopping board. Arrange each on a serving plate along with plum sauce drizzled over the duck breast slices. (Optional: You can also add sliced beetroot on the side.)

  • Step 1 Deep Fry the potatoes

    Take 4 oval potatoes, peel them and slice the upper layer. Then scoop them out from the centre and soak in some water. Meanwhile, put a kadhai over medium flame and heat oil in it. When the oil is hot enough, add the scooped potatoes and deep fry them in hot oil until it becomes golden yellow in colour.

How to make Golconda Chicken

  • Step 1 Wash the chicken and add spices in it

    Wash and clean the chicken, drain the water and transfer it to a bowl. Add chopped green chillies, ginger, and garlic. Then add corn flour, all purpose flour, salt, Black Pepper Corn, food colour and mix it well

  • Step 2 Refrigerate the chicken for 30 minutes

    Then add the egg and mix it well with little water. Refrigerator the chicken mixture for half an hour.

  • Step 3 Heat oil and fry marinated chicken

    Heat a oil and deep fry the marinated chicken and keep it aside. Take a fry pan add cooking oil add chopped garlic, chopped ginger, sliced onions, split green chillies, curry leaves and sauté it for some time,

    Then add little curd and water and cook it well. Then add the fried chicken then add chilli powder, coriander powder, chat masala and salt.

  • Step 5 Toss well and adjust the seasonings

    Toss it until the chicken absorbers the water and dry. Check for the seasonings and squeeze lime wedges.

  • Step 6 Serve hot with lemon wedges

    Place it over a platter and garnish with Fried Curry leaves, chopped coriander and sliced onions with Lemon wedges.

How to make Awadhi Mutton Biryani

  • Step 1 Make caramelized onions

    Heat ghee in a pan, and add onions. Then add salt followed by sugar. Let the onions cook and get caramelized, stir occasionally. Once done, keep them aside. Meanwhile, soak saffron in milk.

  • Step 2 Cook the mutton pieces

    In a cooker, heat ghee and then add deep-fried onions followed by mutton pieces into it. Cook it till the raw smell of the mutton disappears.     To prepare the rice, bring eight cups of salted water to a boil and then add black cardamom, soaked rice, and one bay leaf to the cooker. Cook it for one whistle. The rice should be half cooked.

  • Step 4 Layer up the biryani

    In a handi, add bay leaves to the bottom followed by half of the rice. Top it with some soaked saffron in milk and then add mutton pieces. Again add the remaining rice. Sprinkle nutmeg powder and then add half of the caramelized onions. Sprinkle rose water on the top and then cover the lid. Cook it for at least 30 mins on low flame and keep an eye on the biryani.

  • Step 5 Your Awadhi Mutton Biryani is ready

How to make Corn Hotdog

  • Step 1 Blanch the cornFirstly, let the frozen corn thaw on room temperature. Boil 2 cups of water in a pot. Once water comes to a boil, add corn and cook on high flame for 2 minutes. Take out the corn and submerge them in cold water.

  • Step 1 Roast cashews

    Roast cashew nuts till golden in a little ghee and set them aside.

How to make Mutton Goli Biryani

  • Step 1 Form meat balls

    In a bowl, add minced meat, ginger paste, garlic paste, beaten egg, breadcrumbs, 2 tbsp cornflour, salt, and pepper. Mix everything well. Form small meatballs and freeze them for an hour. Now make a cornflour slurry by mixing some water with 2 tbsp cornflour. Dip each meatball in the cornflour slurry to coat them well. Once done, fry the meatballs in the oil until crispy and keep them aside. Meanwhile, soak saffron in milk.

  • Step 2 Prepare the rice

    Now, heat ghee in a deep non-stick pan and add black cumin, cloves, cardamom, and cinnamon. Stir to mix well and then add rice. Season it with salt and add 4 cups of water. Let it come to a boil. Once it comes to a boil, lower the gas flame and then let the rice cook for about 10 mins. Switch off the gas flame.

  • Step 3 Layer the rice

    In another pan, add half of the meatballs followed by half of the rice. Pour half of the soaked saffron milk and half of the deep-fried onions on top of it to form a layer. Once done, add the other half of the meatballs followed by the leftover rice. Finally, add the rest of the soaked saffron and onions. Cover the pan and let it cook for 10 mins.

  • Step 4 Your Mutton Goli Biryani is ready to serve

    In a mixing bowl, combine soy sauce, oyster sauce, honey, minced garlic, grated ginger, Chinese five-spice powder, salt, and black pepper to create the marinade for the chicken wings.

    Place the chicken wings in the bowl with the marinade and toss to coat them evenly. Let them marinate for a few minutes while you prepare the chilli garlic sauce.

  • Step 3 Make Chilli Garlic Sauce

    In a small bowl, mix together sriracha sauce, soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil (if using), and red pepper flakes to make the chili garlic sauce. Set aside.
