How to make Roasted Duck Breast with Plum Sauce

  • Step 1 Fry shallot for 5 minutes

    To make this delicious dish, cut the plums into halves and finely chop the shallot. Put a pan over medium flame and heat oil in it. Add chopped shallot in the oil and saute for 5 minutes.

  • Step 2 Cook shallot and plums in chicken stock

    In the frying shallot, add the halved plums, chicken stock, and sugar. Stir to mix well all the ingredients and cook for a few minutes until the sugar has dissolved.

  • Step 3 Finish the Plum sauce with red wine

    When the mixture thickens, add the red wine to the pan. Stir to mix well and simmer the mixture for about 15 minutes, stirring occasionally until softened and slightly thickened. The Plum sauce is ready now, turn off the flame and let it cool at room temperature.

  • Step 4 For the Duck breast

    Take two duck breasts and score their skin with a sharp knife and season well with salt and pepper to taste.

  • Step 5 Fry the duck breasts in butter

    Put a non-stick frying pan over medium flame and add butter in it. Let it melt and then add thyme and star anise to it. Now, place the duck breasts in the pan with the skin-side down. Fry the duck breasts for 6-7 minutes, then flip and fry for another 2-3 minutes. Baste the duck breasts with the juices and turn off the flame.

  • Step 6 Roast the duck breasts at 180 degrees C for 10-12 minutes

    Heat an oven at 180 degrees C, place the duck breasts into a small roasting tin and roast them in the oven for 10-12 minutes until done. Once done, baste the duck breasts again with the juices, then set them aside to rest for 5 minutes.

  • Step 7 Serve hot with plum sauce

    To serve, thinly slice each duck breast on a chopping board. Arrange each on a serving plate along with plum sauce drizzled over the duck breast slices. (Optional: You can also add sliced beetroot on the side.)
