How to make Custard Apple Basundi

  • Step 1 Boil the milk

    Add milk to a pan along with sugar and mix well. Bring to a boil and keep on medium flame. Let the milk cook for 6-8 minutes or until it thickens a bit.

  • Step 2 Take out sitaphal pulp

    Now take out the pulp from sitaphal and mash it a bit. Add it to the pan and mix well with the milk. Now let it simmer on medium flame until the milk thickens well and reduces to only 1 litre. Once done, let it cool down and refrigerate it.

  • Step 3 Garnish and serve

    Serve the Basundi chilled by garnishing with chopped nuts.

How to make Goan Patolya

  • Step 1

    In a large mixing bowl, take rice flour, pinch of salt and add lukewarm water slowly. Using a large spoon, mix the flour with water till the dough is formed. Keep it covered.

  • Step 2

    Put a small pan on low flame and add coconut and Jaggery with a pinch of salt in it. Once the jaggery starts melting, add sesame seeds init along with puffed or popped rice, and cardamom powder. Mix everything well and turn off the gas.

  • Step 3

    Once the mixture is cooled, make 5 portions of the coconut mixture.

  • Step 4

    Take one washed turmeric leaf and spread it on a flat surface. Place some rice flour dough on it. Spread evenly on the whole leaf with a wet hand. Using wet hand helps rice dough not to stick on palms and ease the spreading of it. Make a thin layer of dough as much possible.

  • Step 5

    Now, place one portion of the coconut mixture on the leaf and spread evenly leaving out the border of the leaf. Once the mixture is spread fold the leaf one end to another to make a pocket. The border should be tightly packed as while steaming it may get open. Prepare remaining leaves using the same method.

  • Step 6

    If Idli cooker is available, just boil water in the same or can use normal any big vessel. Once the water is hot, take a colander and apply oil in it. In a cooker or vessel, put the stand and keep the colander on it. Place all stuffed leaves on the colander. Now put the lid on the vessel. For cooker, use the lid without the whistle.

  • Step 7

    Let the leaves steam for 20 minutes. Check the Leaves if the dough is cooked properly. If the dough layer is very thick, it may require more time.

  • Step 8

    Once the dough is cooked, let the leaves get cooled down. Then, open one side of the leaf slowly leaving the cooked patolya as pocket intact. You can put a spoon of ghee on the same while serving.

  • Step 1 Soak rice for 30 minutes and then boil them with saffron

    To prepare this amazing sweet rice recipe, wash and soak rice in a large bowl in water for half an hour. Then, in a deep-bottomed pan, add the soaked rice, saffron and water. Bring it to a boil and cook till the rice is almost done.

How to make Eggless Christmas Cake

  • Step 1 Blend the dates

    Add dates to a bowl. Add 1 cup warm milk and let them soak for 15 minutes. Add dates along with milk to a blender. Blend to form a thick paste.

  • Step 1 Beat the whipping cream

    Take whipping cream in a mixing bowl and beat it on medium speed with an electric mixer.

  • Step 1 Boil milk with sugar

    Boil half a litre of milk and add 250 gms sugar in it. Allow it to boil continuously till the colour changes and the quantity reduces.

  • Step 2 Make hung curd

    Now, remove this from the flame and allow it to cool. Add one teaspoon of thick curd, mix well and keep aside. When it becomes curd, hang in muslin cloth and let all the water drain out. You can use this hung curd.

  • Step 3 Blend together hung curd and mangoes

  • Step 5 Make tikkis

    Make small balls from the dough and flatten them a bit to give the shape of a tikki. Press one cashew in the middle of each tikki.

    Now heat 2 tbsp oil on a non-stick tawa. Place the tikkis/kebabs on it. Cook from both sides until golden brown. Serve the hara bhara kebabs with some mint chutney and enjoy.

How to make Corn Hotdog

  • Step 1 Blanch the corn

    Firstly, let the frozen corn thaw on room temperature. Boil 2 cups of water in a pot. Once water comes to a boil, add corn and cook on high flame for 2 minutes. Take out the corn and submerge them in cold water.

  • Step 2 Pan fry the sausages

    Heat butter in a non-stick pan. Add the sausages and pan fry them until cooked. Also toast the hot dog breads if you wish.

  • Step 3 Make the filling

    In a bowl, add sweet corn along with finely chopped onion and tomato. Add salt as per taste, lemon juice, red chilli powder and mayonnaise. Give a good mix.

  • Step 1 Boil the dry white beans

How to make Nolen Gurer Payesh

  • Step 1 Boil milk and soak rice

    To make this classic Gurer Payesh, take a vessel and add milk. Once the milk comes to a boil add the rice which has been thoroughly washed and soaked for an hour. This helps in cooking rice quickly. Keep the flame low after the rice has been added and keep stirring it every 6-7 minutes.

  • Step 2 Add Gur

    Rice will take some time to cook. Once it turns mushy, reduce the flame and add crushed nolen gur along with condensed milk. Cook the payesh for a few minutes till it turns thick. You have to ensure that milk is not on high flame as the gur might curdle the milk. In a pan add 1 tsp ghee and roast the almonds on low flame. You can add other nuts of your choice.

  • Step 3 Payesh is ready

    Switch off the flame and add the roasted almonds. Crush them roughly before adding. Allow the payesh to cool and serve!
