How to make Oats Payasam

  • Step 1 Roast cashews

    Roast cashew nuts till golden in a little ghee and set them aside.

  • Step 2 Roast the oats

    To the same pan, add multigrain oats. Toast and roast them till they’re golden. Then pour milk and mix.

  • Step 3 Cook until thick

    Cook until it turns thick. Then add cardamom powder and sugar (optional). Mix until it dissolves.

  • Step 4 Oats Payasam is ready

    Pour a little ghee (optional) and stir. Transfer Oats Payasam in a serving bowl.

  • Step 5 Garnish and serve

How to make Mutton Goli Biryani

  • Step 1 Form meat balls

    In a bowl, add minced meat, ginger paste, garlic paste, beaten egg, breadcrumbs, 2 tbsp cornflour, salt, and pepper. Mix everything well. Form small meatballs and freeze them for an hour. Now make a cornflour slurry by mixing some water with 2 tbsp cornflour. Dip each meatball in the cornflour slurry to coat them well. Once done, fry the meatballs in the oil until crispy and keep them aside. Meanwhile, soak saffron in milk.

  • Step 2 Prepare the rice

    Now, heat ghee in a deep non-stick pan and add black cumin, cloves, cardamom, and cinnamon. Stir to mix well and then add rice. Season it with salt and add 4 cups of water. Let it come to a boil. Once it comes to a boil, lower the gas flame and then let the rice cook for about 10 mins. Switch off the gas flame.

  • Step 3 Layer the rice

    In another pan, add half of the meatballs followed by half of the rice. Pour half of the soaked saffron milk and half of the deep-fried onions on top of it to form a layer. Once done, add the other half of the meatballs followed by the leftover rice. Finally, add the rest of the soaked saffron and onions. Cover the pan and let it cook for 10 mins.

  • Step 4 Your Mutton Goli Biryani is ready to serve

    You can further seal the non-stick pan with some dough and keep it on low heat for an hour or serve immediately. Your delicious Mutton Goli Biryani is ready. Enjoy the meal.

  • Step 1 Boil the pasta

    Boil water in a pot. Add 1/2 tbsp salt and add the pasta to it. Boil the pasta for 10-12 minutes. Once cooked, drain all the excess water and pour cold water on the pasta to stop the cooking process. Collect the cooked pasta in a colander.

  • Step 2 Saute the ingredients

    Heat oil in a pan. Add chopped onions, garlic, leeks and celery. Saute the ingredients for a minute.

  • Step 1 Make a paste

    Pound coriander roots, garlic, red chilli and shallots using a mortar and pestle.

  • Step 2 Make corn flour slurry

    Add corn flour in a bowl along with some water. Mix to make a slurry.

  • Step 3 Fry the fish

    Now just dip fish fillet slices in corn flour slurry and deep fry them in hot oil. Once fried well, take the pieces out on a plate.

  • Step 4 Sauce preparation

    Now heat oil in a pan. Add the mixture that we prepared by pounding coriander roots, garlic, red chilli and shallots. Stir fry for a minute. Add sugar and salt as per taste along with veg stock and tamarind juice. Cook for 5-7 minutes or until the sauce thickens.

But do you know that to make the most of them, you need to use them in a certain way? According to a video posted on Instagram by nutritionist Ridhima Batra, one should never use garlic cloves directly for cooking.

In the video, she states that you should never use the garlic cloves directly. Rather, cut, chop, or mince the garlic and let it rest for 10 minutes before cooking. This helps in activating the enzyme called alliinase, which gets converted into alliin and then into allicin.

It is said that the active enzyme allicin helps prevent cancer, lowers blood cholesterol levels and blood sugar levels, and even controls blood pressure.

In the same video, she also says that with allicin, we have another potent compound called ajoene that has an anti-platelet effect, which helps prevent coronary heart disease.

How to make Rohu Fish Curry

    Marinate the fish with 1/2 tsp turmeric, 2 tsp garlic paste and salt as per taste. Keep aside in a cool place for half-hour.

  • Step 2 Make a spice masala

    To make the masala, add 1 tsp mustard seeds, 1/4 tsp black pepper, 1/2 tbsp cumin seeds, 1/2 inch ginger piece and 1 tsp garlic paste in a blender. Grind to form a spiced masala. You can also grind the spices in a mortar pestle. Now mix red chilli powder and panch phoran with this mixture.

  • Step 3 Shallow fry the fish

    In a pan, heat mustard oil. Gently place the marinated fish into the pan and shallow fry the fish from both sides. Once fried, take out the fish and place them on a plate.

  • Step 4 Fry the spice masala and tomatoes

    In the same oil, add the spice mixture and fry it for two minutes. Now add tomato paste made using 2 tomatoes and mix well. Let the masala cook until the tomato masala leaves oil. This will take 8-10 minutes.

  • Step 5 Make a gravy by adding water

    Now add 2 cups of water to the pan and bring to a boil. Cook the gravy for 4-5 minutes.

  • Step 6 Add the fish

    Now add the fried fish to the thin gravy along with chopped coriander leaves. Adjust the salt as per taste and cook it for 4-5 minutes more.

  • Step 7 Ready to be served

How to make Edamame Mushroom Quinoa

  • Step 1 Saute the mushrooms

    Heat 1 tbsp oil in a pan. Add minced garlic, oregano, chilli flakes, salt and chopped mushrooms. Saute till the mushrooms are cooked.

    Now add boiled edamame beans and give a toss.

  • Step 1 Chop the ingredients

    Thinly slice the apple, pear, cherry tomatoes and arugula leaves and keep them aside.

  • Step 2 Make salad dressing

    To make the salad dressing, take a mixing bowl and squeeze two lemons in it followed by maple syrup, olive oil, chopped parsley, chopped garlic, black pepper and salt as per taste. Whisk the mixture well to form a nice dressing.

  • Step 3 Mix the fruits and veggies in the dressing

Melt butter in a pan over medium-high heat and whisk the batter again before dipping each side of the bread into it. Let the bread soak for about 10 seconds, then cook it in the pan for 2-3 minutes on each side until golden brown. Add more butter as needed between bread slices.   • Step 1 Mix the dry ingredients

    In a bowl, add rolled oats, oats flour, refined flour, powdered sugar, baking soda, baking powder, raisins, crushed cashews and crushed almonds. Mix the dry ingredients well.

  • Step 2 Add the wet ingredients

    Now add honey and mix it. Add butter in batches (make sure the butter is soft at room temperature, otherwise, melt it just a bit).

  • Step 3 Make a dough

    Mix using your hands to make a soft dough.

    Grease a baking tray or line it with parchment paper. Now pinch out small portions from the dough and flatten them a bit with your palm to give them the shape of a cookie. Lay out all the cookies on the baking tray.

  • Step 5 Ready to be baked

    Slide the tray into a preheated oven. Bake them at 180 degrees celsius for 12-15 minutes.

  • Step 6 Ready to be served
