How to make Khajuri

  • Step 1 Knead a stiff dough and let it sit for 15-20 minutes

    To make this super scrumptious recipe, combine refined flour, semolina, ghee and salt in a large-sized mixing bowl. Mix the contents nicely and then pour milk to the bowl, followed by sugar. Knead the mixture to make a smooth and stiff dough. You can add more milk as per the requirement. Cover the dough with a damp muslin cloth and give it a resting time of about 15 to 20 minutes. In the meanwhile, start preheating ghee in a deep non-stick frying pan.

  • Step 2 Roll lemon-sized balls out of the dough using your palms

    After the dough is settled down and ready to be used, pull out small portions of the dough and roll it using your palms to make small lemon sized balls. Remember to grease your hands with a little oil so that the dough doesn’t stick to your palms. The shape and size of the balls is completely your choice.

  • Step 3 Deep fry the khajuri balls and let it cool completely

    By now, the ghee should be hot enough ready to deep fry. On a low flame, carefully drop the dough balls into the melted ghee and deep fry until they turn a beautiful golden brown.   • Step 1 Prepare the apple

    Take a fresh apple and make a cut on the top. Now cut around the seed area, take a spoon for twisting the seed and take it out.

  • Step 2 Make ice cream mixture

    To make the ice-cream mixture, boil the milk on medium flame. Let it boil and reduce to 1/3 of milk. Add sugar and let it boil for some time. Now milk will become thick in consistency, add condensed milk, nuts and boil it for another two minutes.

  • Step 3 Let it cool down

    Switch off the flame now. Let the ice cream mixture cool down for a while.

  • Step 4 Stuff and freeze the apple

    Take the ice cream mixture, stuff it into the apple, close on top and freeze it for 5 hours.

  • Step 5 Ready to be served

    Once it sets, take out apple ice-cream and cut it into slices and serve it with mint leaves.

Singhade Ke Aate Ki Kadhi Recipe

While observing fasts, people largely depend on potatoes in India. How to make Singhade Ke Aate Ki Kadhi

  • Step 1 Make Kadhi batter

    To make this dish, take a medium bowl and whisk together yoghurt, water chestnut flour (singhare ka atta), sendha namak, red chilli powder and sugar. Whisk it really well until the yoghurt is smooth.

  • Step 2 Whisk with water

    Now, add water to the bowl of Kadhi batter and whisk again to mix.

  • Step 3 Simmer the mixture for 5-8 minutes

    Now, put a saucepan or a cooker on medium flame and pour the batter into it. Keep stirring very frequently until it comes to a simmer to avoid curdling. Then, let the Kadhi simmer for 5-8 minutes or until it thickens.

  • Step 4 Saute cumin seeds

    At the end of the simmering process, heat ghee in a small pan on medium heat. Once hot, add cumin seeds and let them sizzle a bit.

  • Step 5 Add curry leaves and red chillies to the tempering

    Then, add dried red chillies and curry leaves in the tempering and fry for 30-40 seconds.

  • Step 6 Pour tempering to the Kadhi

    Immediately, add this tempering to the simmering kadhi and mix well. Lastly, garnish with chopped cilantro and serve with Rajgira/Kuttu ki Poori.

How to make Marshmallow Brownies

  • Step 1 Melt the chocolate

    Preheat the oven to 180 degrees Celsius. In a large bowl add chocolate and butter. Microwave them for 30 seconds. Take the bowl out, stir and again microwave for 30 seconds. Repeat this until the mixture is smooth.
