How to make Sticky Date Pudding

  • Step 1 Preheat the oven and preparing the baking tin

    Preheat the oven to 180°C. Grease and line the base of a 7 cm deep, 22 cm (base) cake pan.

  • Step 2 Soak dates in boiling water

    Place dates and baking soda into a bowl. Pour them into 1.5 cups of boiling water and allow them to stand for 20 minutes.

  • Step 3 Beat the ingredients with a mixer

    Using an electric mixer, beat butter, sugar and vanilla extract until pale and creamy. Add eggs, 1 at a time, beating well after each addition.

  • Step 4 Mix all the ingredients

    Add this mixture into the soaked dates mixture along with flour. Using a large metal spoon, fold through the date mixture and flour until well combined.

  • Step 5 Ready to be baked

    Spoon the mixture into the prepared cake pan. Bake for 35-40 minutes or until a skewer inserted into the center comes out clean.

  • Step 6 Caramel sauce preparation

    Combine all ingredients- brown sugar, butter, heavy cream and vanilla extract in a saucepan. Keep the heat medium and cook while stirring often, until the sauce comes to a boil. Reduce heat to low and let it simmer for 2 minutes.

  • Step 7 Do final plating and serve

    Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over the warm pudding. Let it stand for 10 minutes. Cut the pudding into six equal pieces and pour the remaining sauce on them before serving. Enjoy!
